Coconut Milk Pancake Recipe

For about 12 pancakes


List of ingredients


- 2 eggs

- 1 sachet of whole vanilla cane sugar
- 25cl of coconut milk
- 120g of whole rice flour
- 2 pinches of powdered cardamom
- Coconut oil


Realization


- In a bowl, beat the eggs with a fork with the vanilla sugar while adding the coconut milk.

- Put the whole rice flour and the cardamom in a salad bowl, make a well then pour in half of the egg/coconut milk mixture.

- Mix well before adding the rest.

- Preheat a frying pan, grease with coconut oil, pour in a portion of the batter using a ladle and cook over very low heat.

- As soon as the first side is cooked and the batter has set, turn the pancake over using a spatula.


😉 Little tip: Mix all the ingredients in a blender to make the dough lighter.
